Freezer Breakfast Sandwiches

§ 12 large eggs
§ Salt & pepper, to taste
§ 12 English muffins, biscuits or croissants
§ 12 slices cheese (any kind)
§ 12 sausage patties, Canadian bacon, bacon or ham
§ Plastic wrap or foil

Preheat oven to 350 degrees. Spray a jumbo muffin tin or small ramekins with nonstick spray. Crack one egg into each ramekin. Use a sharp knife to gently pierce each yolk. (we used a fork and slightly mixed them

Bake the eggs 10-15 minutes, until set. Slide eggs out of ramekins and cool slightly. Sprinkle with salt & pepper, if desired.

Meanwhile, slice English muffins. Layer one slice of cheese on each English muffin, then the meat.

Finally, layer on the egg and top of the English muffin.

Wrap in foil and freeze.

To reheat, remove the sandwiches from the plastic wrap and wrap in a paper towel. Microwave for 1 minute on 50% power. Flip sandwich over and microwave for 1 more minute on regular power.

Brown Sugar Chicken

6 Bonless Skinless Chicken Breast Halves
1 Cup Brown Sugar
1/4 Cup Lemon Lime Soda
2/3 Cup White Vinegar
3 Cloved of Garlic - smashed and chopped
2 Tbsp Soy Sauce
1 tsp Ground Black Pepper

To Freeze: Combine all ingredients in to a freezer bag.

To Serve: Cook on high for 4-5 hours or on low for 6-9 hours in a crockpot.
Serve over rice and with veggie of choice.

Breakfast Burritos

12 eggs
2 Tbsp. butter
1 lb. sausage, cooked and drained
1/2 cup chunky salsa
2 cups Cheddar or Pepper Jack cheese
24 flour tortillas

In large skillet, melt butter. Beat eggs in large bowl and add to skillet. Cook eggs in butter, stirring frequently, until scrambled and set. Add cooked sausage to egg mixture and mix gently.
TO Freeze: Place about 1/2 cup egg and sausage mixture onto each tortilla and sprinkle with some cheese. Roll up each tortilla to make burritos, folding in the ends and rolling up. Place on parchment paper lined cookie sheets and freeze until solid. Then wrap individually and package in zip-lock freezer bags.
TO Serve: When you're ready to eat, unwrap the burritos, wrap loosely in microwave safe paper towel and heat in the microwave on high power for 1-3 minutes until hot and cheese is melted.
You can also thaw burritos in the refrigerator overnight, then wrap each in foil and bake at 350 degrees for 10-15 minutes until hot. The thawed burritos can also be deep fried for 3-5 minutes until golden brown and crisp.

Saucy Chops

1 15oz Can Cream of Chicken
1 ½ Cup of Chicken Broth
1 Package Brown Gravy Mix       
1 Package Onion Soup Mix
4 Pork Chops

Write cooking directions on freezer bag. In a bowl combine the soup, broth and mixes, whisk until smooth. Add chops to a bag and pour sauce over them, seal bag and freeze.
Thaw and add to crock pot, cook on low 6-7 hours. Serve with potatoes or noodles.
Lynn’s Notes/Modifications- I put a total of 1 2/3 cups of broth in since I added 2 extra chops. I just used a regular size can of cream of chicken soup. It was a hit with my guys!!

Crock Pot Hawaiian Chicken

Ingredients
6 boneless, skinless chicken breasts
1/2 cup ketchup
1/2 tsp. Worcestershire sauce
1 tsp. mustard
1/2 cup crushed pineapple with juice
1/2 cup brown sugar
1 can pineapple chunks
 
Instructions
Mix all ingredients together
**FREEZING DIRECTIONS: PLACE CHICKEN IN FREEZER BAG. POUR SAUCE MIXTURE OVER CHICKEN IN BAG. FREEZE.

To Serve: Bake at 350 for 45 minutes or stew in slow cooker for 4-6 hours. For the last 20 minutes of cooking time, dump in 1 can pineapple chunks, without the juice. Cook remaining 20 minutes.
Serve over rice.
